If we treat our sipping chocolate the way we treat our coffee, how would it look like?
We would have to use whole cacao liquor instead of cocoa powder. Whole means that its cacao butter, which gives chocolate its silky feel, is fully intact.
Whole also means the cacao is not alkalinized, a process which tames the wildness of cacao flavor, making it more predictable but also removes the delicious outliers among its notes.
The craft chocolate movement is growing worldwide, rebelling against the uniformity and the flattening of flavor that mass production brings. Craft chocolate makers focus instead on bringing out the best bars from each batch of cacao beans.
